Welcome to the first instillment of what my family of 8 ate for dinner this week! This post is where you will find the recipes and links to the dinners shared for the week! My kids are 11,11,9,6,4, and 6months old. The baby doesn’t join us at the dinner table yet! But those are the ages of my kids and may be helpful to know as you plan dinner for your own family.
Chicken Salad Sandwiches and Raspberries
This recipe is an all time favorite of mine and comes from my own Momma Laura here is the full recipe:
- 10 Chicken tenders cooked and shredded
- 1 cup miracle whip
- 1 TBL spoon of lemon juice
- 1 bunch of green onions chopped
- 3 stalks of celery finely diced
- 2 cups of red grapes quartered
- 1 bag of Uncle Ben’s Wild grain rice prepared according to package
- 1tsp Lowery’s Seasoned Salt
Directions: Mix all ingredients in a mixing bowl and serve on your favorite bread! I prefer Croissants or Artesian Bread.
Italian Peasant Soup with Cornbread Muffins

- I just simply poured my batter into muffin tins instead of a pan
- I also used blue bird all purpose flour since I am currently out of Kamut! Although Kamut is my all time favorite flour and I use it when ever possible! There is currently a shortage so getting your hands on it is a little tricky!

Korean Beef Bowls
This is another one of my families favorites! You will see I often put Mels Kitchen Cafe recipes in my dinner menu because has INCREDIBLE recipes across the board! When looking to try something new her blog is always my first stop! I also highly recommend her THE BEST RECIPES section. They really are the best of the best!

I also love using my instant pot to cook rice! Its fast and easy and I can set it and walk away and once its done I know it will turn out perfect very time! Here is an affiliate link to my favorite Instant Pot HERE
Instant Pot Pork Roast with Baked Potatoes and Vegetables
This is another recipes you can set and go! I love the instant pot for nights when my kids have a lot of activities because I can prep it all and set my instant pot and know that we will have a quick meal with little work! I didn’t follow a recipe for this one but here is what I did:
- One Pork Roast Shoulder
- One Savory McCormick Slow Cooker Seasoning Packet
- 2 cups chicken broth (or beef)
Mix together broth and seasoning packet. Place pork shoulder (mine was frozen) in the instant pot and pour mixture over meat. Set instant pot on high pressure for 1hr 20 min if meat is frozen 40 min if meat is thawed. Allow to naturally release for 10 min before releasing the rest of the pressure. Shred meat and serve with your favorite sides!
I also cooked my baked potatoes in a slow cooker. I cleaned them, dried them and wrapped them. individually in tin foil and cooked on high for 4 hours in my slow cooker. They came out perfect!
This recipe is so simple but don’t let it fool you it was so flavorful and delicious! Each of my family members all cleared their plates!
Pancake Muffins with Fruit and Scrambled Eggs
What are pancake muffins you ask?! Its the easiest way to make large batch of pancakes fast!! with out having to sit and flip pancakes at the stove! You simply mix up your favorite pancake mix. I used the Krusteaz Pancake Mix following the directions on the bag.
I then sprayed my muffin tins with pam spray and poured the batter in 3/4ths of the way full. I baked in the oven at 350 degrees Fahrenheit for about 15 min and they cam out perfect!
Serve with butter and your favorite syrup! You can also make these in large batches and freeze for later! I then whipped up some simple scrambled eggs and sliced fruit. My kids will always eat breakfast for dinner so this is great for nights that I am not in the mood for complaints! lol
Bean and Cheese Burritos with Spanish rice and fruit
If I didn’t mention the week of these dinner we were prepping our house to move out!! So I had a lot on our plate and I needed simply easy dinners! This dinner is not a real recipe because its really just beans and cheese but I do want to introduce you to the BEST refried beans from the store!!

Instant Pot Lasagna Soup
Can you see the theme here! Lots of instant pot recipes and weeks where I need dinner done fast! I LOVED this recipe from the one and only Mels Kitchen Cafe! I have tried about 4 other recipes for Lasagna soup and this one with the cheese mixture was the best hands down! You can find the full RECIPE HERE LASAGNA SOUP
I simply served this recipe with Texas toast from the freezer section of my local grocery store. It was another bowl licking dinner my kids loved! I also loved that you can sneak a few vegetables in without them really even knowing!
Weekly Dinner Ideas
